Lipoxygenase causes peroxidation of certain poly-unsaturated fatty acids, namely the linoleic and linolenic acids present in latex triglycerides. Lipoxygenase activity was measured using an enzymatic model, namely soya lipoxygenase, Lox-1, at various pH values.
